The Importance of Family Meal Planning

What has happened to us? There once was a time when we would all come home from school or work and sit down with our families and enjoy the ritual of family mealtime. It was the best meal of the day, offering a wide variety of nutrition and family conversation.



Today, less than half of American families eat dinner together and when they do, these meals last less than 20 minutes and are lacking in proper nutrition. The fact is our life styles have changed from those magical days of Ozzie and Harriet. Thanks to the Internet, cell phones and palm pilots, business is conducted on an almost 24/7 basis. Even conversations with our children are often times through text messages or cell phone. Sporting events and outside activities for children have become almost maniacal in the demands made upon the family. It has become a race against time so that we can fit it all in. Something has to give, and that unfortunately has been the family dinner hour.



When we squeeze out the family dinner we sacrifice more than you could ever imagine. According to a study conducted by the National Center on Addiction and Substance Abuse at Columbia University, the children that dined regularly with their families were 31 per cent less likely to smoke, drink or take drugs and do better in school.



Healthy self-esteem for children can be built around a family dinner table. Parents can take the time to listen and help their children sort out the struggles of the day without interference of phones, tv’s and computers.



Our hectic life styles only give time for overly processed foods or even worse "fast foods." This poor nutrition has resulted in children contracting what was once considered "adult diseases" at an alarming rate. High blood pressure, high cholesterol, diabetes and obesity all stem from poor nutrition and processed foods.



Not only is the family dinner hour a great time to catch up on each other's lives, it also offers more tangible benefits. Family dinner hour can improve grades at school and promote a richer vocabulary. Younger family members that do not have the interaction of speaking within the family group often struggle with poor communication skills. In troubling times such as these, the routine of a family meal helps to ease tensions and frustrations of teens and young children by receiving guidance and assurance through other family members.



Planning these meals, shopping for the ingredients, and to a lesser extent, cooking the dinners, is a time consuming task. In many cases, time needed for both professional careers and for the children's extra-curricular activities make it nearly impossible to coordinate the family dinner. However, now more than ever, it is important to invest this time. The dividends are worth the effort. Today, make your family feel special. Prepare a nutritious meal and sit down to a family dinner. Find out what is up with your children and make the time to talk with each one. Unplug the world and plug into your children for one hour ever day.

The Components of Wine - What Makes a Type of Wine Unique

To understand what makes the different types of wine unique you need a basic understanding of what goes into a wine. Most people would look at you blankly and say 'Grapes, of course' if you were to ask that question, but it breaks down further and it is only by understanding the basic structure and ingredients of a wine that you can develop a full understanding of what you are drinking. Needless to say, with that understanding comes a far greater appreciation of the type of wine and pleasure in drinking it. The grapes that go into a wine provide the acids, tannins and sugars which, together with the yeasts, produce the alcohol and flavor of the wine, hopefully producing a harmonious whole which has structure and longevity.



Much is made of acidity in wine, with wise nodding of heads and mutterings of about the balance of a wine, but what does it actually mean. All fruits, even the sweetest, contain acids, it is what gives them their fresh flavour, without it the fruit would seems sweet and sugary, somewhat like drinking the syrup that is used when bottling fruit. Wine also requires acidity for just the same reason. If there is too much acidity then the wine will be sharp, and very harsh in your mouth to the point of being almost undrinkable. Not enough and the wine will be syrupy and flat tasting dull and lifeless, especially if it is a sweet wine. You can detect acidity around the edges of your tongue, especially towards the front; it gives the wine a sharpness and liveliness in your mouth. Wines from cooler regions generally have a higher acidity, for example, New Zealand or northern France. Warmer countries such as Australia tend to produce wines that are lower in acidity giving them a deceptive softness which often belies the alcohol content. In fact some Australian grapes have such a low acidity at harvest that more acids have to be added to allow the wines to be drinkable and to age well. Adding acids has to be done with extreme care, volatile acids such as tartaric acid, can really lift the flavours in a wine when added in small quantities but too much makes the wine taste and smell of nail polish remover or worse.



Tannin is another one of those wine 'buzz' words that is little understood though much used when discussing types of wine. Tannins are chemicals that are found in the skins, pips and stalks of grapes, they are also found in tea and oak amongst other things. They are essential in a wine if it is intended to age because they act as a preservative. You can feel tannins by the sensation of puckering in your mouth, or the 'furring' on your teeth. Red wines, which are fermented in contact with the pips, stalks and skins have more tannins in them than white wines, this is one of the reasons why these types of wine age better and last longer. Over time the tannins mellow and the wine becomes more balanced and the puckering sensation decreases. Tannins are most important in wines that are intended to age for a long period using grapes such as Cabernet Sauvignon, Nebbiolo and Syrah/Shiraz but they are still needed in red wines that are to be drunk young to give a structure without dominating the wine or making it too harsh, young clarets or some Beaujolais wines for example. As the wine ages and the tannins soften the wine becomes more complex and interesting with flavours developing that linger in your mouth for a long time after the wine has been drunk. If the tannins in a wine are found to be too harsh when you open it, all is not lost. You can combine it with high protein or high fat foods, such as good cheese or a rich meaty dish. Alternatively (and some will view this as heresy) leave the wine overnight and drink it the next day. It will be perfectly alright and a great deal more mellow. Modern wines tend to be less tannic as they are made to be drunk relatively quickly but if you get the chance, try a wine that has some age to it and you will notice the difference. Ideally try two vintages of the same wine and you will see how tannins affect the aging process very clearly.



The sugars in wine come from the grapes and much of the skill of any winemaker is in selecting grapes that have the right amount of sugars in them to create the balance between acidity, flavour and alcohol that makes up a good wine. Grapes grown in cool climates have far less sugar as they struggle to ripen in the more uncertain weather conditions. Some types of wine may have a little sugar added either during fermentation or afterwards to enhance the characteristics of the wine. There will almost always be a little sugar left after fermentation because not all sugar compounds are subject to the action of the yeast. How sweet a wine tastes is very subjective as we all judge differently. Some wines which are very dry can still taste sweet because of the high fruit flavours which mask the lack of sweetness in the wine itself. Equally the amount of tannins and the acidity has an effect, we generally think of red wines as being dry because of the tannins but this is not always the case. There are some wonderful sweet red wines from Germany that are quite a surprise to the palate. Generally speaking however, the sweeter the wine the higher the levels of residual sugar, a very dry wine would have as little as 1 gramme per litre, whereas a Sauternes might have as much as 250 grammes per litre.



The other factors which affect wine are more ‘external’ such as the type of yeast that is used in fermentation, the type of barrel – Oak or other woods, or even beneficial rot such as Botrytis. All types of wine contain these basic components, but the overriding factor in the flavour will always be the grape or mix of grapes, from which it is made. All wine lovers have their favourites and will seek out new wines containing them like searching for treasure. There is only one judge of how good a wine is, and that is you. However all these components are put together, if you like it, it is a good wine.

Japanese Scotch Triumphs

In 1975 a friend asked me if I wanted to become involved in the marketing of a new whisky, from India. A few days later he arrived with a brown bottle in the shape of an eagle and poured me a glass of amber liquid, which looked like any other whisky I had ever seen. It smelled like whisky too. But it tasted like engine oil, with an aftertaste of Liquafruta - a particularly revolting cold remedy preferred by an aunt I spent my summers with as a child. Or at least that's how I remember it now, thirty odd years later.



I never did become involved with that particular business and I've avoided imported scotch-alikes ever since. So it was with some surprise I read that 20-year-old Yoichi, distilled by Nikka, beside The Sea of Japan had been voted the world's best single malt whisky at The World Whisky Awards, hosted by the UK's Whisky Magazine in April.



Another Japanese triumph was Suntory's, Hibiki receiving the accolade for the world's best, blended whisky, for the second year running. This must be particularly galling to the Scottish distillers, as it was in Scotland that Masataka Taketsuru learned the art of distilling in the 1920's. When he returned to Japan he helped to found the whisky distillery that is now Suntory.



The prizewinners were chosen in a blind tasting by a panel of sixteen master blenders, journalists and distillers from a selection of two hundred different whiskies from around the globe. Yoichi beat some formidable local names, including last year's winner Talisker 18 year old, distilled on The Isle of Skye.



The judges said Japanese distillers were producing excellent Scotch with the variable climate in Japan assisting maturation and creating a purer whisky with a more interesting nose. Traditional distilling apparatus such as coal-fired pot stills, rarely used in Scotland, were also credited with adding flavour to the Japanese products.



A Suntory spokesman said that, although exports to Europe were relatively small, they had managed to increase sales of their Yamazaki brand from just over two thousand bottles four years ago to forty eight thousand bottles last year. Kiyoshi Monoka, Suntory's marketing director for Europe was very upbeat after their win saying: "15 years ago we were told it was nonsense to try to sell Japanese whisky to the rest of the world. Now we have many, many fans enjoying Japanese whisky and looking for new brands to try."



With exports up nearly fifteen percent, the Scottish industry probably does not see Japan as much of a threat. But last year Scottish distillers decided to make a combined investment of £400 million pounds ($800 million) to be spent over the next three years improve existing distilleries and building new distilleries and warehousing. They hope this investment will give them the capacity to protect existing markets and cope with increasing demand from emerging markets in China and India.



Although they only began making whisky eighty years ago at the Yamazaki Distillery, the Japanese appear to have learned a lot and consensus at the awards seemed to be that Scottish whisky makers still deserved their reputation, but could not afford to be complacent.



Tetsuji Hisamitsu, chief blender at the Yoichi distillery, just smiled and said he was “very moved” by the award.

Sugar Free Chocolate

When it comes to sugar-free or diabetic chocolate there is a warning on the label stating that it has a laxative effect. That is because when people enjoy too much of the chocolate that contains the sugar alcohol Maltitol it can result in digestive upset. The American Dietetic Association 'advises that more 50 grams of sorbitol or 20 grams of mannitol per day can cause diarrhea.



But the reason that diabetic chocoholics like it so much is that it is slowly absorbed in the intestinal tract so only a small portion is digested and absorbed therefore they don't need to use little to no insulin. Therefore diabetics really need to read the label to see how many grams of sugar alcohol is in the product. Although there have been chocolates for diabetics for years, once in a while a person will encounter an less then authentic taste with chocolate.



There are newer forms of diabetic chocolates based on maltitol. Maltitol is a natural occurring sugar found in starch. These sugar-free chocolates based on maltitol don't have the same unpleasant aftertaste that other artificial sweeteners often have. Besides maltitol is very stable and has high melting point making it great for in the of making chocolate.



Maltitol based chocolates tastes almost as sweet as sugar based chocolates except fewer calories and doesn't cause tooth decay like sugar does. An additional benefit of Maltitol is that unless you eat an excessive amount of the chocolate it shouldn't cause stomach upset. it also as a replacement of fat and it still gives the chocolate that rich creamy taste.



In the recent past diabetic chocolates were based on saccharin which became popular during the Second World War because the sugar supplies were scarce.



During the sixties sweeteners were blended with saccharin were in attempts to improve texture and flavour. So when in the 80's when aspartame came into being was like the greatest thing that came along since sliced bread. That was because it could be blended with fruit flavors.However, this has caused some misconceptions about “diabetic” foods among people with diabetes.



Unfortunately people confuse sugar-free from diabetic. Thinking that they can indulge themselves, sugar-free still has carbohydrates.



What people don't realize is that they can make their own diabetic chocolate.



You start with finding sugar-free nuggets and wafers that can be used in diabetic chocolate. It takes a little research on the internet. Then once that is done then get molds that you like. Then melt the chocolate slowly over a double boiler. If you don't have a double boiler then just use a pot over another pot that has the water in it. Just make sure that no water gets into the chocolate otherwise it gets really runny. Stir continually so it doesn't burn! That is very important I found out myself! Some people try the microwave oven but you have to do it very slowly at 30 second intervals, once again so it doesn't burns. But on the up side there isn't any water contamination.



Once the chocolate is properly melted just pour it into the molds and let it harden (this is a cheat, put in the refrigerator.)



So a word to the wise just watch yourself so you don't eat too much. There are that problem of that would be diarrhea and since so have a high fat contain there maybe a some weight issues. So read the labels before you buy.

Some Tips On How To Make The Perfect Cup Of Coffee.

If like me you really enjoy a good cup of coffee to get you going in the morning, or just like to relax with a cup of coffee while reading the paper, these simple tips should help you enjoy your coffee even more.



In Italian the term espresso means made on the spot, and an espresso should always be served immediately after making. No matter what you are drinking whether you are having a latte or a cappuccino, it will be based on an espresso. On average it will take about 42 coffee beans to make an espresso.



What has more caffeine an espresso or a normal cup of filter coffee, you may be surprised to learn that it is normal filter coffee. The amount of caffeine in a cup of coffee is determined by the length of time the water is in contact with the coffee beans. That means if you are looking for a good caffeine hit, surprisingly, you will be better of going for a normal filter coffee.



What you should be looking for in a good espresso is a that it has a dark colour; it is rich in taste and has a natural light brown froth on the top. The froth on top is called the crema. When making a cappuccino remember to follow the rule of thirds one-third espresso, one-third steamed milk and one-third foamed milk. If you remember this simple formula you will make the perfect cappuccino every time.



How your coffee will taste depends on the types of beans that are used to make it. The taste of the bean can also be affected by the how and where the coffee bean is grown. How the coffee bean was processed after being picked will also affect the taste. This means that you should really think about the type of coffee bean that you buy for your home or while out at the coffee shop. You may find that you prefer the taste of Java coffee or coffee grown in Hawaii is more to your liking. Just remember to buy top quality beans as this will always make a difference. Whether you buy your own beans and grind your own, or by beans already ground, how you store the coffee can have an affect on the coffee’s taste. Always try and store the beans/grounds in an airtight container, I also like to store the container in the refrigerator to keep them fresh.



Also remember to use good water, after all coffee is 98% water. If your tap water is poor quality I would try and use filtered water. You may think of using bottled water, but I would advise against this purely based on that it isn’t good for the environment.

If you are looking to reduce the amount of fat you use in cooking, wine may be a good substitute for cooking oil. Wine can be used as a cooking liquid in roasting, slow cooking and more. It also makes a flavorful addition to sauces and many other types of dishes. Adding wine intensifies the taste of food with adding extra fat, which is certainly bad for your health.



There are many other health issues that may be helped through the moderate drinking of wine. These include:

What makes wine add such a touch of sophistication to just about anybody? Is it the jewel-like color or the fancy glasses we drink it from? Is it because it represents special occasions for many of us? Is it because we associate it with formal events and celebrations? Maybe it is because we don’t really understand wine very well and feel that those who do have a little extra touch of sophistication about them.

The language of wine gives us wine drinkers the image of sophistication. Often those who do not drink wine are not familiar with wine terminology like tannin, body, acidity, oak, fruitiness, legs and aromas. Wine lovers often debate the different types of wine, the right or wrong way to serve it, whether to decant or not and the flavors and aromas detected in it. They also discuss where wines are from, good years versus bad ones and so much more. It definitely can lead non-wine drinkers to think that we are more sophisticated than the norm. It can also make people think we’re a little pompous!



Reputation



Wine is, by and large, the drink of choice for many special events and for celebrations. Therefore people have come to associate it with people enjoying themselves. Although one of the best ways to explore new wines and learn about them is through wine tasting. Whether you do a wine tasting at home or go to an event, trying it yourself and talking with other wine lovers is the best way to make wine discoveries.



Wine is a sophisticated drink. It is very complex, but can nonetheless be enjoyed by anyone. Whether you have the desire to understand it or not, wine is a wonderful way to relax, enjoy a meal or just liven up a get-together.

Broadening the Wine Spectrum

Every so often, even us wine lovers tend to get tired of drinking the same thing time after time. Even if we like to experiment, sometimes we get stuck in a rut of buying the same type of wine from the same regions or even only buying a few bottles that we know we like.



It’s easy to keep things the same and avoid change. When we get to thinking about it, we often wonder why we don’t experiment more. Here are some tips to make it easier to get back into the swing of wine variety.



Go To a Wine Tasting



A great way to widen your repertoire of wines is by attending wine-tasting events. These events are often hosted in someone’s home, in a wine store or at a wine bar. By trying a variety of wines and keeping a careful record of what you’ve tasted and what you’ve enjoyed, you’ll be able to quickly and efficiently find new wines that you like and that fit your budget. An online search will provide you with a listing of local wine events.



Start with Something Simple



Choose to try something that is similar to a type of wine you already like. If you love dry reds, switching to a sweet white may not be the best bet. If you enjoy Merlot from the Napa Valley and the Pays d’Oc regions, you might do well by trying some Australian Merlots, one from Washington State or a Chilean Merlot.



If you like practically all Merlots, a Cabernet Sauvignon, Shiraz, red Zinfandel or Beaujolais may be good choices for branching out. If you enjoy light sweet white wines like Riesling, you may want to try some blush wines or white Zinfandel. Many of the unusually named German wines may also be enjoyable for you.



Try Something New in a Restaurant



Next time you are enjoying a meal out, instead of getting a glass of something that you usually drink, order something different. You can get just a glass to see if you like it or not. Finding the correct wine storage temperature is not really mystery; warm is bad; cool is good. White wines and blushes are to red wines what ice is to blood; they need to be thoroughly chilled before serving if they are to have any impact whatsoever. No matter their wine storage temperature where you have been keeping them, get them to 39 F, or 4C, before taking the first sip. All wines, no matter their color and their wine storage temperatures, should be given a chance to breathe after they have been opened.
